Hailed by many as a "superfood", grass fed beef liver is a premium organ meat. Our cattle are raised on pasture without hormones, so you can be sure this liver is a clean food, in addition to being an incredible source of nutrients, including vitamins A, D and B12.
Liver & Onions Recipe:
1 pack Mahaffey Beef Liver (peel skin) 1 lg. yellow onion sliced thin 1 C flour 1/2 C bacon grease beef stock Tony's Seasoning Black Pepper Green onions for garnish
Season liver on both sides
Dredge in flour to coat, shake off excess
Place in bacon grease, heated at medium in cast iron
Fry on both sides until crispy brown (approx. 2 min)
Set aside on paper towel to drain
Cook onions in same cast iron until caramelized
Remove onions with slotted spoon, reserving bacon grease in skillet
Add remaining flour to bacon fat and make roux
Cook/whisk until medium brown in color
Add beef stock & water until smooth consistency
Add cooked liver & onions back in gravy, simmer about 30 min.
Garnish with green onions and serve over homemade mashed potatoes!
